Avocados are one of my favorite foods. They are so tasty and healthy, and can be adapted to use for a lot of recipes. I’ve heard that they can be used as a substitute for mayonnaise in a lot of recipes too, which is great to know with Kris avoiding dairy. I also really enjoy salmon, and since it’s so healthy and we live on the coast, we try to have it frequently. I was searching for a salmon recipe to try out that was different than my only non-allergenic one I have right now, and came across this one. If you like salmon and avocados, give it a try.
Sorry these pictures aren’t great, they’re of the leftovers so definitely not the nicest pictures. And my salmon is more smothered than drizzled lol. I like lots of avocado.
Avocado Dressing
- 2 ripe avocados
- 1 lime or lime juice
- 1 clove garlic (optional)
- 1 tsp. sea salt
- 2 T. red wine vinegar
- 1/4-1/3 cup avocado oil (or olive oil)
Scoop the flesh from avocados into food processor. (I used a hand mixer.) Add chopped garlic and other ingredients and pulse until blended. Stop and taste. Adjust seasonings if needed.
Grilled Lime Salmon
- 2 salmon steaks
- 1 tsp. avocado oil or olive oil
- Dash of salt
- Dash of black pepper
- 1 fresh lime or lime juice
Brush the fish with oil, and season with salt and pepper. Place on a grill pan and grill either in over or barbecue. When done, squeeze on some lime juice. Serve on a bed of greens with extra avocado slices and drizzled with avocado dressing.

Mmm that sounds really good – and I like that the recipe is for 2 and not for 6 or whatever the normal ones are – SO hard to cook for one or two when you’re used to a larger number!
