I had some store-bought cranberry orange muffins that were a little dry and stale, but still delicious. Ever since, I’ve wanted to try making them myself. I made these tonight. I can’t give credit for the recipe as I kind of combined a few different recipes together. I couldn’t find fresh or frozen cranberries anywhere, so I rehydrated dried ones. The muffins turned out really good, except it was drier than I expected at the end and so I think I overmixed it a little bit. I also meant to add a bit of vanilla and forgot. Still, they were infinitely better than the storebought ones.
I think next time I might try Paxye’s blueberry muffin recipe, because I love the texture of those ones, only using orange juice instead of milk and cranberries and chocolate chips instead of blueberries.
2 cups flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cranberries
- 1/2 cup chocolate chips
- 1 egg
- 3/4 cup orange juice
- 1/4 cup melted butter
- 1 teaspoon grated orange rind
Combine dry ingredients. Add cranberries and chocolate chips.
Beat egg, orange juice, butter and orange rind. Add to dry ingredients all at once, stirring just to moisten. Do not overmix.
Spoon into greased muffin cups. Sprinkle tops lightly with a bit of sugar.
Bake 400F 15-20 mins until lightly browned and firm to the touch.
